Arrowroot

(Maranta arundinacea)

Arrowroot (Maranta arundinacea) – this plant is fairly well known for its pure white starch product that can be purchased in most grocery stores. The rhizomes are fairly fibrous, meaning some level of processing is certainly required, which limits its potential as a root crop. However, arrowroot is a beautiful landscaping plant and is easily cultivated.

OUR WORK

The Utopian Seed Project has been growing arrowroot for a number of years, mainly working with root stock from board member, Yanna Fishman. In 2019 we began exploring the culinary potential of arrowroot based on some late 19th Century references to Arrowroot Pudding. Board member, Jamie Swofford, and baker Keia Mastrianni, worked to create a modern take on arrowroot pudding for our 2019 Trial to Table Farm Dinner. The delicious creation made it onto Dr. David Shields Top 10 food experiences of 2019!

Arrowroot (Maranta arundinacea) is a tropical perennial that we can grow in North Carolina as a temperate annual. Arrowroot is fairly well known as a starch producing tuber, but few people think about its botanical heritage and crop potential in North Carolina.
This video is part of a The Utopian Seed Project series called, Meet-the-Plant, where plant experts introduce you to less known plants (in North Carolina) that have food production potential.
In this video, Brandon Ruiz, founder of CLT Herbal Accessibility Project and Utopian Seed Project board member, gives a historical, botanical and culinary overview of Arrowroot.

This week`s #trialnotebook is about everything getting too big! We`re very much looking forward to warmer weather and the chance to transfer everything outside!

Here you can see lerenes (Guinea arrowroot) in the foreground and a huge achira (aka Canna edulis) in the background.

Today`s temperate basement update includes a new addition from @brujobrandon - Lerenes aka Guinea Arrowroot. It`s been described to me as having sweetcorn-esque flavor. It was actually @keiaishungry who made us aware of this plant after experiencing it in Peurto Rico. The plant on the left is Canna edulis aka Achira.

Stepping up the arrowroot this year. Last year @keiaishungry made arrowroot pudding (combining 19th century inspiration with her own special flare). It was delicious and has inspired a larger grow out for 2020.
