Sweet Potatoes (Ipomoea batatas)
OUR WORK
Yanna Fishman
Someone asked me yesterday, which was the sweetest? I had to admit that I hadn`t tasted them yet! Well, now I have!
Also, picture 3: expert help from the two year old taster and the five year old note taker 💚
I would never reduce the complexities of the sweet potato to a simple measure of sweetness, but to answer the question: Covington (a patented commercial variety). Also the ONLY variety to spill it`s syrupy guts whilst baking.
However, that didn`t make it my favorite, not by a long way. Gem and Jewel had a delicious fruitiness. Georgia Red was just the right amount of sweet. Edge, with its rare yellow flesh was smooth and supreme. Suwon 47 was another yellow fleshed surprise. Papota had the cooked flesh color of dirty bath water, but was creamy and sweet. Camote Morado had the best flavor and texture of the purples 💜

Looking forward to hosting community tastings again 💚

Apart from the labels, there is a `spot the difference` between photo one and photo two. Can anyone spot it?
All varieties grown from Yanna Fishman`s collection apart from Georgia Red which we`ve been maintaining for @sowtrueseed

Sweet potato digging is done! I`ve dug 33 varieties and they are now curing!
The sweet potatoes are part of our exploration and celebration of varietal diversity in southern crops. Our board member, Yanna Fishman, has been doing this work for many years and we`re excited to be helping her efforts.
We`ll be presenting all the diversity online over the winter months! We`re also exploring the culinary diversity. Sweet potato greens and sweet potato coffee are two uses we`ll be reporting on.

Here`s a selection of edible summer greens growing at the #experimentalfarm right now. Even though you may never have tried (or maybe heard) of some of these, they are not new. We did not discover them. They belong to cultures older and wiser, ancestral work done to create many of the food crops that exist today, both known and forgotten.
We support eating and exploring these crops, and there is resilience in a diversified food system that will be much needed as climate change continues. But climate justice and climate work goes hand in hand with social justice and social work, so respecting those who came before (the work, the culture, the traditons, the people) is critical to our journey.
This picture shows a world of possibilities, but it also shows the world.

Getting the sweet potato slips (40 varieties...) ready for planting and separating out some Patreon thank you gifts at the same time. We`re just 3 patrons away from our first goal, which means we`ll create and share the much requested Utopian Seed Project sticker!

Check out the leaf diversity of these sprouting sweet potatoes! Board member, @thechefsfarmer, has been working on identifying varieties of sweet potatoes with culinary appeal (shape, color, taste). May that work continue!

We got this purple true yam (Ube) in the ground before the rain. Based on its behavior so far, there is a chance it`ll take over the farm before I get back to the field and build a 20-30 ft trellis!
If it`s going to be a Little Shop of Horrors routine, at least the Ube plant is beautiful with heart shaped leaves.... #ube #trueyam #dioscoreaalata #experimentalfarm #experimentalroots
The Ube (Dioscorea alata) is taking off quickly. These beautiful heart shaped leaves are just the beginning of some vigorous vining to come. We also have white yam, same species, which hasn`t leafed out yet but is sprouting quite happily.
